Mint Pancakes 2 Cups Flour 2 tablespoons of baking powder 1/4 Cup Sugar 2 large eggs 2 tablespoons Vegetable oil 1 1/2 Milk 1/4 teaspoon mint extract (or some crumbled mint leaves if you like) Put all of the ingredients in a bowl and blend into a smooth mixture. Pour small patties of batter into a frying pan (batter will be runny so leave room so the pancakes will not run together) and cook on one side until batter bubbles then flip. Cook until both sides are brown
